Chantarelles


Foraging for mushrooms is incredibly fun and addictive one of my favourites is the Chanterelle. They come up in the late summer. Chanterelles are bright-yellow to orange in colour and don’t have true gills. Instead they have widely spaced ridges that fork and crisscross. Toast in a dry pan for 15-30 seconds then fry with butter and salt for a minute or two – delicious.
