- 2 Pickerel, filleted
- Salt and pepper to taste
- 1/4 cup Flour
- 1/2 cup Shortening
Pickerel is best when the catch is fresh. My auntie says that the pickerel is the “prize” fish because it is the best tasting!
Heat the shortening in deep frying pan. Dip pickerel fillets into flour on both sides. Fry for about 8-10 minutes on each side until golden brown. Add salt and pepper to taste. My favorite way to serve fried pickerel is with some fluffy mashed potatoes and cream style corn with a slice of bannock!
